Where I work, they are cooking with Fiddleheads, pasta & sauce. Looked wonderful. Learn something new everyday. Understand it's a New England dish. Have YOU ever dined on them?

They need to be picked early, washed well, steamed and then washed and steamed again. The water should be changed between steaming. If they are not prepared properly they can make you sick. You should only eat the fiddles from the ostrich fern.

missed the question! Most here steam the fiddles and serve with a bit of butter. Nothing fancy. The ostrich fern grows in great numbers along the Connecticut River as well as many rivers and streams.

Yes this is a really big New England tradition. Here in Maine you will often see folks selling fiddleheads at the side of the road. You can even buy them canned here.. They are pretty tasty with butter, salt and pepper...

I would advise caution as Bracken,a wild fern over here,is deadly poisonous,so much so that nothing will eat it,not even rabbits,and i would think that would go for many ferns. I guess its like mushrooms,you have to get the right one.
