I should have tried the recipe before buying the book. No denying it's convenient to have fresh dough in the fridge, but to me the flavor can't compare to a bread with much less yeast. And I have to admit I actually enjoy kneading ... well, at least after the hand mixer does some of the work. I made AnnT's Italian bread today and even though I deflated the dough when I slashed it (haven't mastered that art yet) it still tasted incredible!

Have you looked at the other recipes?

I just bought another new book..tried two recipes,and thought..hmm.. not so great..I tried a third..and Redemption:)

They say if you glean one keeper recipe from a book..it's a keeper.

Suzy, not trash, it's just that I prefer a different type of bread and bread-baking. I don't have a huge cookbook collection and can't see keeping something I'll never use. Better that someone else can benefit. So far I have you, Elsie, Kathleen, and Gloria. I'll draw a name on the 29th.
