1/2 cup butter (no substitutes), softened 2/3 cup sugar 1 egg, separated 2 tablespoons milk 1 teaspoon vanilla extract 1 cup all-purpose flour 1/2 cup cocoa 1/2 teaspoon salt 1 cup finely chopped pecans Filling: 12 to 14 caramels (recipe was tested with Hershey caramels) 3 tablespoons heavy whipping cream 1/2 cup semisweet chocolate chips 1 teaspoon shortening In a mixing bowl, cream butter and sugar. Beat in egg yolk, milk and vanilla. Combine the flour, cocoa and salt; add to the creamed mixture. Refrigerate for 1 hour or until easy to handle. Roll into 1-in. balls. Beat egg white. Dip balls into egg white and coat with nuts. Place 2 in. apart on greased baking sheets. Using the end of a wooden spoon handle, make a 3/8 to 1/2 in. indentation in the center of each ball. Bake at 350º for 10-12 minutes or until set. Remove to wire racks to cool. Meanwhile, in a heavy saucepan, melt caramels with cream over low heat; stir until smooth. Using about 1/2 teaspoon caramel mixture, fill each cookie. In a microwave, melt chocolate chips and shortening. Drizzle over cookies. Yield: about 2 1/2 dozen note: I use parchment paper on the cookie sheet to bake these and the mice. So much easier. Also, I used 2 chocolate squares (Baker's) with 1 tsp. margarine (also easier).

Ok..Ok..I'll try these too! Diane..I love your NO Substitutes. The girls at the office that wanted one got a copy of the mice this am:) Had fun trying to find the licorice:(

I had the same problem here, Monique. We finally found a store out here in the country that had the shoestring licorice. My city is quite small, but I knew where there had been some. All of them were moved to make a space for Christmas stuff. But one package of the mini-chips, mini-M&Ms and the shoestring licorice can do quite a few batches of mice, if some who are interested would care to share.

Ohhhhhhhh, these look wonderful! I've been waiting for the new country store in town to open - it opened! You know what they had??? An old fashioned candy section and guess what I found! I'm so excited.

Oh Diane, those cookies look and sound so delicious! Monique, if you make a batch, can I have ONE??????? If I make some then I will have to eat them all, and I will gain weight, and turn into my porky old self again, and I don't want to do that!!!!!
