This is my husband's absolute favourite recipe for date squares - no doubt the lb. of butter that goes into it makes it so sinfully good. I usually 1 1/2 times the filling, but I have also made it just as the recipe says. I gave this one to a friend who has since abandoned her old time fav. Base and top 2 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 2 cups butter 2 cups brown sugar 4 cups rolled oats Filling 1 package dates 1 tablespoon brown sugar 1 tablespoon fresh lemon juice 1 cup water (just under) Cook the filling until dates are softened and combined. Let cool. Pat half the crumb mixture into an 8X11 pan. Once filling cool spread evenly. Pat the remaining mixture on top and bake at 325 for 30 - 40 minutes. Watch so the edges do not burn. I always line the pan with wax paper which makes them easy to remove from the pan and to cut in uniform squares.

They're one my favorites too - but I'm the only one here who will eat them. I'll try it, Kim, and share it with friends :) Thanks!
