Undecided what to cook for dinner and in a matter of seconds thinking of how to cook chicken tonight. I prepared chicken fillets so easy and tasty and enjoyed by all. Seared fillets with dijon mustard on both sides and sauted them in olive oil until golden brown. Added sliced red onions and chopped mushrooms. 1pt of chicken stock and runny honey. Two sliced carrots. Bay leaves Basil or fresh herb of own choice To thicken stock at end of cooking add cornflour. Then add to casserole with lid and put in oven for 1 1/4hrs then enjoy with boiled or mashed potatoes and a fresh green veg. I had courgettes in garlic. This could even be cooked in a slow cooker . This is my own recipe out of my head not a cook book and it all came together and was very tasty.
