I took a baking class from Abigail about two weeks ago and purchased her book - which, by the way, is fabulous! I made these cookies yesterday and they are, by far, the best I've ever tasted. A nice texture, a little chewy, but not heavy. So delicious. NO BUTTER IN THESE COOKIES!

If you ever have an opportunity to take a class from her, do it.

Her site has some interesting recipes as well. The 10 minute Mocha Pots are yummy.

Big Time Peanut Butter Cookies

I’ve jam-packed this classic cookie with big-time peanut flavor by using peanut butter as the only fat. With P.B as the key component, the cookies become so creamy and moist you won’t believe they don’t have any butter in them. And, with only five other ingredients, the dough is thrown together in the time it takes to heat up the oven. If you want a bit of crunch, use peanut butter with chunks. Makes 20 cookies.

1-1/3 cups [10 ounces] smooth or crunchy peanut butter, at room temperature
¾ cup [6 ounces] firmly packed light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1/4 cup [1 ounce] all-purpose flour
1 cup [6 ounces] mini candy-coated chocolates (optional: I use mini M & M’s)

Position an oven rack on the middle rung. Heat the oven to 350 degrees. Line two cookie sheets with parchment or nonstick baking liners (I like the Silpat).

In a large mixing bowl, combine the peanut butter and brown sugar. Using an electric mixer (a stand mixer fitted with the paddle attachment or hand -held), beat on medium speed until the mixture is well blended. Add the egg and vanilla and beat until just blended. Add the flour and mix on low speed until well blended. Stir in the mini chocolate candies by hand, if using (the batter is quite thick and an electric mixer’s beaters would pulverize the candies).

Using a small ice-cream scoop (about 1-2/3 inches in diameter) or two table spoons, scoop up rounded tablespoonfuls of the dough and, using your hands, shape into balls (about 1¼ inches in diameter). Arrange on the prepared baking sheets about 2 inches apart. Using the tines of a table fork, press on each ball to flatten slightly. Lightly coat the tines in flour to prevent them from sticking to the dough, if necessary.

Bake one sheet at a time until the cookies look dry on top, about 12 minutes. Transfer the cookie sheet to a rack to cool about 10 minutes. Using a spatula, lift the cookies from the sheet onto a rack until completely cooled.

Makes 20 cookies

Peanut butter is a weakness in this house. Thanks for the link and recipe, Ro.
No butter and still yummy is always a plus! I haven't taken a cooking class
in so long and they are so much fun. I love watching them on television too.

We absolutely love these. Abby weighs everything for her recipes to insure consistency. I weighed the ingredients (of which there are only a few) and loved the result.

I've signed up for 3 more cooking classes... :-) I love them.

I have to say Sam made these last night in the "Martha mixer" without any supervision. They were delicious - a nice texture. He was making them for a girl at school. I think they are having a bake off. They will be added to our cookie favourites here. They were lovely and golden like Monique's but since they were made by a 14 year old boy they were monster size. Really great. Thanks for the recipe.
