Should really be called left-over soup as we had chicken bones and calabrese(broccoli)left from Mothering Sunday's invasion. I was writing this down as it worked so well, then I though why not share......:- My Saucepan holds 7 pints so I started with six pints of water to which I added:- 1 cooked chicken frame, an onion, some organic salt free chicken and veg stock cubes, a large chili chopped [I used a dried one I had handy and just crushed, it having finished the making the soup I had a rude reminder to wash one's hands after handling chillies, but thats another burning story]....... a small handful of curry leaves, 1 lemon grass split in four, a couple of inches of ginger a shake of Mediterranean herb and a handful of parsley. Simmer for a couple of hours, with a lid on, then drain, reserving the ginger lemon grass and onion. Return the liquid and the above to the stove. To this add a couple of pounds of chopped squash. I used large a marrow (zucchini) from last summer's harvest. Simmer without the lid for about another hour. Remove the lemon grass and liquidize the rest with about 1½lb of cooked calabrese. Leave to the next day heat and serve.
We never use salt in cooking, but this is spicy so shouldn't need it. I served it with a swirl of soya cream and hunks of fresh bread.

Yummmmmmmmmmmm. I made chicken soup today too, but it was just plain old chicken soup - yours look delicious!

Thanks for the comments everyone. If you like the sort of flavours you get with Thai soups ie lemon grass, ginger and chili, this has it, combined with the smoothness of a thick home made chicken soup. DW wants a repeat so that's why I wrote it down as I cook as the fancy takes me and repeats are normally impossible. Lucy, I've got the soup if you've got the snow, and I've always fancied visiting Canada,

Terry, the snow is nice to see and that's it, but to enjoy, you should visit Canada when you can walk through gardens in their full glory! Snow is fun if you are a skier, that's about it. (for me anyways). I would kiss the snow goodbye in a minute, if I had the opportunity to!

What a nice way of putting it.. MM home made soup..gotta love it.. I simmered Sunday night's carcass with onions..bay leaves.. carrots celery garlic etc for my soup base..J turned it off ..I never thought about it then..Got up the next morning and au contraire to how I am ..the stock pot was still on the stove(off)..But oy... unrefrigerated this stock went out the door..Too bad I was in the mood.. Now yours is here..

How cultures vary, also change with time. I was brought up in a time where the stockpot sat on the stove day after day, and at the most might have been put in the larder over-night. I often leave mine over-night on the stove waiting to be finished the next day - there wouldn't be room for it in the fridge. I do re-boil for a while to eliminate any nasties that might be lurking. Better luck next time Monique. Lucy, I'm with you as far as the snow goes, unless its in someone else's garden, then I don't mind admiring it. DW loves it, and has been very disappointed this year as none has settled here even though we have has many more dustings than normal.
