Best Chocolate Easter Eggs!

These delicious cream filled eggs taste just like a very famous store bought one. They are easy to make and kids an adults love them.

1 cup soft butter
2 tsp. salt
4 tsp. vanilla
1 can condensed milk (Eagle Brand)
10 cups icing sugar
1 tsp. yellow food coloring
1 lb. semisweet chocolate

Beat butter, salt and vanilla until fluffy. Add milk, beat in sugar. Blend until stiff. Dust with brown sugar. Knead until smooth.

Set aside more then 2/3 of mixture. To the remaining mixture add yellow food coloring. Blend in well. Divide yellow and white into 16 or 24 pieces. Shape yellow into balls, mold white around yellow to form an egg shape. Dry at room temperature on paper towels or wax paper for 24 hours.

Melt chocolate in double boiler until smooth. Dip eggs in chocolate. (some add paraffin wax to chocolate to prevent chocolate from melting in your hands.) Once dipped cool at room temperature. Refrigerate after cool.

When sliced these eggs will have a white cream filling with a yellow filling that appears to be the yolk. They look nice sitting in an Easter basket!

I never made these! We sure colored lots of Easter eggs, though.
Do you have young children, Pussywillow?
I'll have to save this one for grandbabies, someday.

SusanQ; I have 2 grown daughters and my 7th grandchild was just born this past Sunday; a new grandson that weighed in at 8lbs. 3 oz. Now the grandmother of 2 granddaughters and 6 grandsons. :)
They all live close by which makes it nice.

Glad you all are enjoying the recipes. I would like to see some Easter recipes from other members as well.

Always a favorite is having Hot Cross Buns for Easter morning Breakfast.

Hot Cross Buns


2 pkgs. active dry yeast (1/4 oz. each)
1/4 cup warm water (110-degrees approx.)
1 cup warm milk (110-degrees approx.)
1/2 cup sugar
1/4 cup shortening
2 eggs
2 teaspoons salt
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
4-1/2 to 5 cups flour
1 cup dried currants
1 egg white, lightly beaten
ICING:

1-3/4 cups confectioners sugar
1/2 teaspoon vanilla extract
4 to 6 teaspoons milk
Dissolve yeast in warm water. Add milk, sugar, shortening, eggs, salt, cinnamon, allspice and 3-cups flour. Beat until smooth. Stir in currants and enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic (appox. 6 minutes). Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place about 1 hour.
Punch dough down. Cover and let rest for 10 minutes. Roll out on floured surface to 1/2-inch thickness. Cut with a floured 2-1/2 inch biscuit cutter (or use a glass). Place 2-inches apart on lightly greased baking sheets. Cover, let rise until double in size (about 30 minutes).

Brush with egg white. Bake at 350-degrees for 12 to 15 minutes or until golden brown. Cool on wire rack. For icing; mix sugar, vanilla and enough milk to achieve piping consistency. Pipe a cross on top of each bun. Makes 2 dozen.

Pussywillow, DH made your Chocolate Easter Eggs the other day and they turned out to be SCRAMBLED EGGS! LOL
DH would like to know, how do you KNEAD after dusting with brown sugar? All is very soft and stringy and there is no flour in the recipe. He had a puzzled look on his face and so did I, after seeing this soft ball of ????
What did he do wrong?
