Felt so yucky with a head cold today but made the ham roll-ups and deviled eggs for the Spring (yeah, right!) Ladies Luncheon tomorrow. The eggs are really sooo good and easy. :) 12 hard cooked eggs 1/4 c. bacon, drained and crumbled 1/2 c. chopped spinach, thawed, drained, and squeezed dry 2 1/2 TBSP vinegar (I used balsamic) 2 TBSP butter softened 1 TBSP sugar 1/4 tsp. salt pepper to taste Combine the mashed yolks with the remaining ingredients and mix well. Fill the whites evenly with the mixture.

I love deviled eggs. This is a nice twist. I'll try them. Once I went to a Easter luncheon and the host dyed the white part of the deviled eggs. It was the first time I had seen that. They were tastey and fun too. Bright pink, lime green, peacock blue and orange. So your recipe is timely. I'll make them neon :).

Oh, I'll bet they'll be pretty Kim. :) My whole family including the grandkidlets love deviled eggs. I will serve this one for our Easter dinner this year.
