I mentioned these in the Soc. Gallery. Here be the recipes. :) Layered Pudding Dessert (Crust) 1 c. room temp butter 2 c. flour 1 c. nuts chopped 375º till lightly browned 13 x 9 x 2 pan 1 c. powdered sugar 8 oz. cream cheese room temp 1 c. whipping cream 3 3/4 oz. pkg. instant choc. pudding 3 c. milk 1 3 3/4 oz. package instant butterscotch pudding 1 TBSP. powdered sugar 1/3 c. toasted slivered almonds Beat 1 c. powdered sugar and the cream cheese till smooth. Beat whipping cream in chilled bowl until stiff. Fold 1 cup of the whipped cream into cream cheese mixture; spread over baked layer. Mix chocolate pudding (dry) and 1 1/2 c. milk on low speed about 2 min; carefully pour over cream cheese mixture. Mix butterscotch pudding (dry) with 1 1/2 c. milk on low for about 2 min; carefully pour over chocolate layer. Fold 1 TBSP. powdered sugar into remaining whipped cream; spread over butterscotch pudding. Sprinkle with almonds. I let this set overnight. Creamy Pineapple Salad* (This recipe is adapted for the blender but I use my mixer...) 1 can (3 1/2 c.) crushed pineapple 2 envelopes unflavored gelatin 1/2 c. sugar 1 c. unsweetened pineapple juice 1 c. orange juice Rind of 1/2 lemon (colored portion only) 3 TBSP. lemon juice 1 8 oz. package cream cheese, cubed Drain pineapple, reserving syrup. If necessary, add enough water to make 1 1/2 cups. Heat syrup to boiling. Put pineapple syrup and gelatin in blender container; cover and run on speed 1 or low until gelatin is dissolved. Add remaining ingredients except pineapple; cover and run on speed 6 or high until smooth. Pour into bowl and chill until the consistency of unbeaten egg white; (I set it in the freezer for about 35 min.-set the timer!) stir in drained pineapple. Pour into a 2 qt. mold and chill until set. *This is also good with mandarin oranges(drained) added...adjust the juices accordingly.

Thanks Tanya..Would you know how many sheets of gelatin I would use? You'll have a feast at Easter. I bet the pudding dessert is a fav too.. My kids seem to like this kind of dessert.. We make fake Mille-Feuilles like this and a dessert called: (I did not name this)..Bettter than sex cake.. ..I would have named it differently.

Wow, M, just a guess, but I bet one sheet of gelatin is equal to one packet(?) Anyone else care to venture a guess or fact?

Tanya, that sounds wonderful. I love anything pineapple. Tanya, did you ever post in Garden Town?? I'm trying to figure out if you're the Tanya with the vidalia onions? lol..

A similar recipe has been in my husband's family for many years. It's one of my daughter's favorites! My MIL makes it without the almonds and puts chocolate shavings on top.

There's also a variation where you put chocolate chips in the crust...very good. :) This is requested at all family get-togethers. I supposed I've been making it for close to 15 years...just one of those well-loved desserts that quickly become tradition as with your DH's family Susan. :)
