Was at it again..Another of my very favourite meals he makes for us..



He buys the mussels same day delivered fresh.. and right in the fridge they go.. then scrubbed clean and covered with a damp cloth..
In a large pan ..he heats some evoo,chili pepper flakes.. shallots,garlic.. and adds wine..sometimes a few fresh chopped tomatoes..it makes a delicious broth.. Plops the mussels in till done..not long..
Tops with fresh parsley and grated lemon rind..
I freeze the bouillon to make paella.

I am sat here drooling,Monique, I am very lucky that DW hates Les Moules, so when I pick up a kilo, they are all for me [ what a pig I am].
What is Evoo in your recipe?
One of my favorites is to stuff them with a garlic, parsley and breadcrumb mix and pop them under the grill.

I'll give J the compliments to the chef..Terry..I never thought I could eat these:( I tried them.. a few yrs ago..and wondered why I had not before..
I still can't do raw oysters though:)

Great idea in the oven after they are cooked and opened right?

I tried once yrs ago and they were overdone..The trick must be quickly right?
Do you undercook them first?
