I feel like an old slipper..I have been around so long I may be repeating myself.. When the weather is fine..I have salads on the mind:) Grilled Chicken salad in Tortilla baskets..
Basically you marinate the chicken in the fridge all day in a Dijon/garlic/Evoo marinade.. Grill it and place it..sliced..atop a mixed mesclun salad that has a vinaigrette that blends well with the marinade..and serve it in a Tortilla bowl with home made croutons..I like this kind of no fuss dinner. If anyone wants the exact recipe..just ask..I place the breasts in a baggie with the marinade in the morning be4 work in the fridge..

Looks so good, Monique. I just tried a cauliflower salad that Wayne really liked, but I prefer a vinaigrette dressing rather than something creamy. Must try this! I like the bowl as well!!!

That would be a wonderful spring/summer dinner! The marinade sounds yummy. A recipe would be greatly appreciated :)

Mustard Grilled Chicken Salad. Chicken.. 2 tbsps oloive oil(EVOO) 2 tbsps dijon mustard 1 clove garlic minced 1 tsp each marjoram and paprika 1/4 tsp cayenne 4 boneless Chicken Breasts 8 cups torn Mesclun 2 tomatoes diced.. red onion rings anything else you love in a salad that would marry well with this.. Dressing: 1/3 cup Evoo 2 tbsps white wine vinegar 2 tsps dijon 1 clove garlic minced s and p In a baggie..that's how I marinate now..I add all the chicken ings and let the chicken marinate overnite or all day in the fridge.. J grills the chicken while I prepare a nice salad.. toss with a bit of the dressing.. Serve the bowls.. add sliced grilled breasts.. add onion rings.. croutons etc.. and drizzle more dressing..Enjoy. PS No grill? You can cook the chicken on the stove too!Grilling just gives it what the recipe says..Earthier:)

Yum, yum, yum! You have inspired me. And it is salad time for me. Come spring and summer, I love have a nice salad for dinner, either grilled chicken, avocado, tuna, whatever!
