Before going on our mini holiday..I made this salad and found it quite tasty..anyone feel like adding summer salads here apart from ones we have done? I liked this one..Could be a light meal with a baguette.
Spinach and maple salad ======================= 1/2 tsp Dijon 4 tsps Cider Vinegar 3 tbsps veg oil 2 tbsps maple syrup Spinach..a bag of baby 1 sliced peeled,cored apple. grapes..seedless endives avocado Seedless clementine cashews endives 1 sliced red onion 1/2 red or yellow or orange pepper. . Mix dressing ings.. Toss with salad ing. Servings: 4

Monique; I must compliment on your food displays and presentations. They always look so lovely and Oh sooooooo appetizing. You need to work for a cookbook company with all the lovely food photos that you take.

Beautifully presented, Monique! I am finally just getting into summer menus and will try your salad. Here is one I served recently for a friend's birthday at the end of May (sorry, no photo). It was yummy! CAESAR CHICKEN PASTA SALAD SALAD 3 cups shredded grilled skinless chicken breasts 3 cups cooked penne 2 cups thinly sliced romaine 1-1/2 cups cherry tomato halves 1/2 cup thinly sliced fresh basil 1/2 cup chopped green onions 1/2 (2 oz) grated Parmesan cheese 1/4 cup chopped fresh parsley 1 garlic clove, minced LEMON YOGURT DRESSING 1/3 cup plain yogurt 2 T fresh lemon juice 1 T olive oil 2 tsp red wine vinegar 2 tsp Worcestershire sauce 1 tsp anchovy paste 1 tsp Dijon mustard 1/2 tsp freshly ground pepper Combine the chicken, pasta, romaine, tomatoes, basil, green onions, cheese parsley and garlic in a bowl and mix gently. Combine the yogurt, lemon juice, olive oil, vinegar, Worcestershire sauce, anchovy paste, Dijon mustard and pepper in a bowl and mix well. Add the dressing to the salad mixture and toss to coat. Serve chilled or at room temperature. I served with a Microplane and a wedge of Parmesan Regianno.

I love chicken salads Susan..And Ceasars:)And Pasta.. So I will do this one for certain..It's so hard to get into summer when it's not here to get into.. 5th consecutive day of lots of rain.
