Because I love garlic, but it is also the only way I can get GARLIC SCAPES!! Here they are in the garden. I clip them off right where they meet the first leaf.
Here they are harvested
Here they are cut up along with some fresh ginger
And I stir fry them with chicken (or beef or pork) along with some sesame oil and a little hot red pepper.

How does a garlic scape taste, Greg? If I had to guess just from looks I'd say a cross between a scallion and garlic.

Hi Robin, I've been traveling and just got back, so I haven't had a chance to respond yet. Garlic is easy to grow . . but there are a few things you need to know. It's best to use garlic that has been grown specially for seed. It is usually left in the ground longer than the garlic you get at the grocery store. For garlic scapes, you will want a hardneck variety (as opposed to a softneck variety). I like German reds, but there are many kinds. I usually purchase my seed garlic from Johnny's Seeds in Maine (http://www.johnnyseeds.com). First . . . and most important . . . you need to plant your garlic in the Fall. They need some time to develop roots before winter. This will give you bigger and better heads of garlic. In my zone 4 I usually plant near the end of October. Usually a couple weeks before we get a good freeze. You will want to plant the individual cloves 1-2 inches deep. If you don't get a lot of snow pack for insulation, you may also want to mulch it with 6-8 inches of leaves or something like that. Second . . . garlic are heavy feeders, so make sure you amend your soil with a good amount of compost. You can use fertilizers. I generally don't. The garlic should come up in the spring and you will harvest some time in mid-July usually. I follow the old tradition of harvesting when only three of the leaves remain green and the rest have turned brown.The scapes will around the end of June. Whether you eat them or not, you should cut them off as the flowering bulbletts will take energy away from the developing garlic underground. You'll end up with bigger cloves if you cut it. I find garlic one of the easiest to grow and most rewarding of crops! I left 300 garlics growing in raised beds when I moved in May of this year, so this fall I am starting from scratch again. In my new town, they call themselves the "garlic capital of Eastern Ontario" and they have a Garlic festival every year. This year I bought the German red and a BIG bag of seed garlic. Greg's advice is spot on. Do an hours worth of work in October and reek, I mean, reap, the benefits all next year!
