I never realized making paella was so simple. Begin by sautéing some onion, garlic, bell pepper and sausage until slightly softened. I add salt, pepper, thyme, paprika and of course saffron. Add some medium grained rice and stir through. Add a good portion of chicken broth and keep adding more broth as it cooks and is absorbed (over about 20 minutes). Near the end, add the shrimp. Cover and let the shrimp cook through for a few minutes. A real paella also has squid, mussels, chicken, and the sausage should be Spanish chorizo. I didn't have that, but this tasted good none the less.

I am glad you discovered the ease of this dish:) I eventually bought a paella pan to serve directly on the table.. I love having company serving this but I do add mussels and chicken:)The problem is finding people who eat everything in it:) I love adding roasted red peppers although I don't think I should.But because we roast many each yr..this dish puts them to good use..Oh frozen peas for color too:) Isn't it pretty too? I love it.

The Paella I had in Washington DC last week had both roasted red pepper and peas. I think you can put in anything you like!

Greg this looks delicious. I'm going to have to try this this week. Gorgeous! Can you use brown rice? I try not to eat any white rice. Monique, do you cook the mussles in their shells and put them right in the dish to cook?

Hi Deanne, I hear you about the brown rice. I've been using mostly whole grains these days and when I have rice, I use brown rice. The problem with paella is you need a rice that doesn't take too long to cook and releases the starch to make it sticky and creamy. I haven't found a brown rice yet that could do that. I think you might be able to precook some brown rice and add it, maybe 50/50, with a short grain starchy rice. At least that would be more nutritious. I opt, instead, to just eat this sparingly and balance it with other foods.

So, Ro, are you the "mystery buddy"? I have never made paella but I am certain to try it after this thread. My family enjoys a dish I make called Southwestern Risotto, something I will make tonight. I will post the recipe...when I have time. Anybody preserve their garden produce? I have good recipes for garlic jelly, red pepper jelly, apple jelly, salsa and bread and butter pickles, if anyone is interested. Good for you, EJ. I have the pickiest family of eaters ever!!!!
