Tis the season.. Here at least for peppers.. That means one thing..or more to me: Roasted red peppers/which lead to pizzas..and pasta sauces and grilled sandwiches and soups.. And ordinary peppers which mean:) Stuffed peppers!
Comfort food.. Pre - cook some rice and have it on hand..much easier.. use big plump fresh peppers.. Saute some onions.. garlic..extra lean ground beef.. add 1 can of tomato soup or fresh tomato sauce..+ a creamy hot pepper sauce.. salt..pepper.. herbs.. Hollow out the beautiful peppers.. save the top..stuff the peppers with your aromatic precooked filling..and bake 1 hour at 350 or until peppers are done.. I served this with a simple Boston Lettuce salad with home made herb dressing. All I need

Yum, yum!!! Do you think I could substitute ground turkey for the ground beef? If I used brown rice instead of white it would 'legal' as well as beautiful!

As long as the hot pepper sauce wasn't too hot. I love stuffed peppers but I can't make it and no one in my family would eat it.

I haven't had stuffed peppers for years! I would make them but DH wouldn't eat it, he hates peppers. I love them grilled. Have you ever made Pepperonata, Monique? I had it as an appetizer at a dinner party on baquette toast and it was delicious. Lovely photo!!

We do these stuffed pepper frequently. Red, green and ortegas but with a sauce in place of their hat. Yours are delightful.

scott loves these, alas its frozen stouffer's for him! i love the look of peppers, never acquired the taste, BUT i do ADORE your photo presentation!
