This is a recipe I took from Allrecipes.com and I love it and make it all the time. Don't over mix.

I added salt to the recipe, there was none and it needs it.

I also added dark chocolate chips to it.. yummmmmmmmmmmmmmmmmmm!

The Best Banana Bread

INGREDIENTS:
1/2 cup margarine, softened
1 cup white sugar
2 eggs
1 1/2 cups mashed banana
2 cups all-purpose flour
1 teaspoon baking soda

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.

Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.
Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

If you have over ripe bananas, freeze them in a zip lock bag (in the skins) and use them for banana bread. They will look ugly but they work fine.

Yummy! Looks like my recipe, but I reduce the sugar to 3/4 cup and add chopped walnuts or pecans sometimes!
