When the acorns and leaves fall from the trees because of the squirrels..I love picking them up and putting them in a tall glass cylinder with a floating candle to light the shortening eves..



It suited the mood of leftover pork roast with a new recipe from a co-worker..Potato Lasagna..



Simple! I used a small springform but will use larger at Thanksgiving..
Grease pan..
Layer mandolined potatoes..white..
I wilted spinach in spicy oil and garlic..and spread atop that layer..
Then Ricotta..and a drizzle of home made roasted red pepper oil..
Next layer..mandolined sweet potatoes..
Layered with fresh basil.. ricotta..onions.. and oil..
Next layer
White mand.potatoes..
Mozzarella or Provolone and again the drizzle of RRPO..
It serves beautifully..and with S&P..It is definitely something i will make again..:)

OMG were the first words i uttered... honest. it looks sooooooo good. we are hot and summer, but you look like a cool fall day... just beautiful and something i will have to make when i ever move back indoors!

That looks so delicious, Monique! I will surely try this recipe.
It reminds me a somewhat of our dinner tonight - scalloped potatoes with ham.

Do you have a recipe for the home made RRPO?

What a wonderful idea for the acorns, etc!

Saturday we roasted the huge bushel of red peppers..once they are halved and grilled on the BBQ,we put them in brown paper bags..it softens them and the skin peels off beautifully..In the interim,I have a big big bowl with EVOO, fresh basil,and garlic that has been getting tasty to which I add the peeled RRP's while we finish doing them all..so the peppers get marinated before bagging and freezing and I am left with a fair amount of a rich tasty oil..:)
I naked my small one at 350 for about 1 hr..



By the way we don't need an expensive manoline..although they must be quite the kitchen treat..mine is just one of those hard plastic things..
