I love making these..

And..it's the perfect time of year..


Mes Herbes Salées
Salted Herbs

Wonderful to season soups, rice ..anything you think would taste better with thisJ

1 ½ cups parsley
¼ cup chives
¼ cup savory
2tsps thyme
1 tsp rosemary
1 ½ cups carrots
1 ½ cups leeks
½ cup celery
4 onions
¾ cups coarse salt.

Finely chop all ingredients.I used a hand chopper for the herbs and a processor for the vegetables.
Put everything in a bowl and mix with the salt.Cover and refrigerate for 4 days..Put in individual little pots.
Will keep refrigerated for weeks.I keep mine all winter for all those comfort foods.


Adds a Je ne sais quoi.Special.




And the finished product..You can use 1 tsp..1 tbsp..I also love to coat a roast:)

Looks very yummy, I can almost taste the flavor. Is it watery? I think I need to make some, I love home made soups and this would be a lovely addition.

Blue said it well.... too cute for words.

Oh so many..

Like seeing your mom EVERY Sunday afternoon/night that I can remember..to name just one tiny thing..
I make up for all my shortcomings with my kitchen trials..

The salt of course creates liquid.. but very little.. You just spoon a teaspoon or two into chicken soup..cream "ofs.." wotever..It's Vewwwy salty Ro so sometimes you can omit the salt in a recipe..J likes it so teases himself with it just like that..
It's good mixed with garlic butter for bread etc..

Some add oil and put it in sandwiches under the mayo..the aroma is similar to Dagwood's sandwiches special condiment.

If I was nursing kittens.. creating Italy and Germany simultaneously..
I would not be making salted herbs..
This is a fall comfort activity for dwindling garden hours and daylight hours..
I like to keep busy:)

PS I do like the little canning jars instead of the mason jars for this..
We had soupe Bonne Femme tonight and even though they figured in the initial recipe..I added a dollop on top..Pretty color and additional taste..a swirl of Maple syrup around and we were all set for the cool evening dinner.
