Here's the one I make most: INCREDIBLY GOOD AND EASY SALSA 2 medium size ripe tomatoes (quartered) 1/4 medium size onion, quartered 4 sprigs cilantro 2 cloves garlic 1 tsp. garlic salt 2 Tbs. lemon juice 1 Tbs. lime juice 1 jalapeno (1/3 for mild, 2/3 for medium, 1 for hot and spicy) Opt. 1/8 green bell pepper, chopped Drop jalapeno and garlic into running food processor and process until fine. Add remaining ingredients to processor and pulse until consistency you prefer is reached. Tastes even better after it stands a day. Here's another one, quite similar, I recently tried from Allrecipes.com and I like 1/2 sweet onion, chopped 1/2 green bell pepper, coarsely chopped 1/4 cup fresh cilantro 2 slices pickled jalapeno peppers, or to taste 6 fresh tomatoes, quartered 2 teaspoons olive oil 2 teaspoons red wine vinegar 1/2 lime, juiced 1/8 teaspoon salt DIRECTIONS: Place onion, bell pepper, cilantro, and jalapeno peppers into a food processor. Pulse until finely chopped. Add tomatoes, and pulse just a few times until the tomatoes are coarsely chopped. Transfer to a bowl with a tight-fitting lid. In a separate bowl, whisk together olive oil, red wine vinegar, lime juice, and salt. Pour dressing over tomatoes, and stir well. Cover, and refrigerate for at least 1 hour.

I forgot to add... I love adding chopped peaches or mango to the salsa as well... for a change.

Another idea for you, Sharon. I've been oven-drying my tomatoes and then packing them in olive oil to use over the next few months. I have also frozen them whole first on a cookie sheet in the freezer and then I transfer them to zipper bags and use them in chili or soups over the winter.
