I found this at allrecipes.com and it's going to be lunch. I love bique-type soups. Butternut Bisque Soup INGREDIENTS: 1 tablespoon canola oil 1 tablespoon unsalted butter 1/2 cup diced onion 3/4 cup diced carrots 4 cups peeled and cubed butternut squash 3 cups vegetable stock salt and ground black pepper to taste ground nutmeg to taste 1/2 cup heavy cream (optional) DIRECTIONS: Heat the oil and melt the butter in a large pot over medium heat. Cook and stir the onion in the butter and oil under tender. Mix the carrots and squash into the pot. Pour in vegetable stock, and season with salt, pepper, and nutmeg. Bring to a boil, reduce heat, and simmer until vegetables are tender. In a blender or food processor, puree the soup mixture until smooth. Return to the pot, and stir in the heavy cream. Heat through, but do not boil. Serve warm with a dash of nutmeg.

I never did make it today, but it's going to be a meal soon. I love squash too, espcially the cold weather squashes.

Ro..I think I have oodles of squash soup recipes ans LOVE them all.. Thank you! One more..Signature...Ro. The prettiest presentation I have seen is with a beautiful .real..squash blossom on top:) Oy is presentation ever a big thing in food appreciation for me:) Thank you! Hmm..served in a pumpkin..too cute and mouth watering:)

Served in a little pumpkin, cute indeed. :-) The big thing (again) seems to be serving soups in bread bowls. Do you do that? I haven't, but it looks pretty and I agree, presentation makes a big difference. I love your hair Monique.

sounds delish on a cold night, dunked with a sourdough baguette of course... ok, throw in a fab chocolate dessert too please! yeah i know, i need a personal chef...
