From my last cooking class. It's a very yummy recipe.

WARM APPLE CRISP WITH CINNAMON CREAM
8 apples peeled and sliced 1/4 inch (variety of apples is best)
3/4 C sugar
1 1/2 tsp cinnamon
1/8 tsp freshly grated nutmeg
5 T minute tapioca
1 T lemon juice

TOPPING – double topping
1 cup flour
1/2 cup sugar
1 stick butter
Pinch salt
• Mix together sugar, cinnamon, nutmeg, tapioca
• Toss apples with lemon juice
• Add sugar mixture to apples toss
• Make topping: mix sugar and flour together add salt. Cut butter into 1 inch pieces
and using a pastry blender cut butter into flour until you have a crumbly mixture
(pea size pieces)
• Butter a 9 inch baking dish
• Place apples in dish
• Cover apples with topping
• Bake at 350 for 45 minutes1 hour. Top should be golden brown-cool for 20
minutes.

CINNAMON CREAM
1 cup heavy whipping cream
1/4 cup confectioner sugar
3/4 tsp cinnamon

Whip cream for 1 minute on high. Add sugar and cinnamon whip until peaks form. Place a dollop of cream over warm crisp.

ENJOY!
