INGREDIENTS:
1 1/4 cups butter, softened
2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder (I use Dutch processed)
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semisweet chocolate chips

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl or mixer, cream together the butter and sugar until light and fluffy.

Beat in the eggs one at a time, then stir in the vanilla. Sift together the flour, cocoa, baking soda, and salt;

stir into the creamed mixture. Mix in the chocolate chips.

Drop dough by teaspoonfuls onto ungreased cookie sheets.

Bake 8 to 9 minutes in the preheated oven. Cookies will be soft. Cool slightly on cookie sheet;

remove from sheet onto wire rack to cool completely.

You can also add nuts to the recipe if you want. I would start with 1/2 cup of your favorite chopped nuts. I imagine Macadamias would be simply awesome in this recipe.

That's a cookie I could love, Greg! I will have to try these.

One of my favorite cookie recipes is a Bakers 'One Bowl' Brownie cookie recipe which I've slightly adapted:

ONE BOWL CHOCOLATE BROWNIE COOKIES

• 6 oz bittersweet baking chocolate
• 4 oz unsweetened chocolate
• 6 tablespoons butter or margarine
• 1-1/4 cups sugar
• 3 eggs
• 2 teaspoons vanilla
• 1 cup flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 2 cups toasted chopped hazelnuts (optional)


Heat oven to 325 F. Microwave chocolates and butter in large microwavable bowl on high for 1-1/2 to 2 minutes or until chocolate is almost melted, stirring halfway through heating time. Stir until chocolate is completely melted and smooth.

Stir sugar into chocolate mixture until blended. Mix in eggs and vanilla. Stir in flour, baking powder and salt. Stir in nuts. Drop by rounded tablespoonfuls, 1-1/2 inches apart, onto ungreased cookie sheet.

Bake 12 minutes or until set. DO NO OVERBAKE. Cook 5 minutes, remove from cookie sheets. Cool completely on wire racks.
Makes about 3 dozen.
