Just typed up this recipe for a goodies plate recipient and thought maybe someone here might like it also. These are REALLY good and easily one of my favorites. Hope you enjoy !


Persimmon Cookies

1 C. shortening (no transfat kind)
3/4 C. brown sugar
3/4 C. granulated sugar
1 egg
1 C. peeled/chopped persimmon (2 lg. or 3-4 small)
2 C. flour
1 teas. salt
1 teas. baking soda
1 teas. cinnamon
1/2 teas. ginger
1/2 teas. ground cloves
1 C. walnuts
1 C. raisens

*Spice glaze

Combine shortening & sugars
Add egg, beat well
Mix in persimmon pulp
Add flour, salt, soda, cinammon, ginger, cloves
Mix well.
Add walnuts & raisens

Bake at 350 degrees for 10-12 minutes

Brush with Spice glaze while hot.

*Spice glaze
1 C. powdered sugar
2 TBSP. water
1/4 teas. mace
