I like a cooking forum I frequent and a lady named Sue shared this recipe..They have become favorites here..I thought I would pass this delicious recipe on to you..I just made some this morning and it was anice way to start a New Year. Lemon Ricotta Hotcakes From NY Times - Adapted from the Four Seasons Hotel in New York 6 large eggs,separated 1.5 cups whole-milk ricotta cheese 1 stick unsalted butter, melted and cooled 1/2 t. pure vanilla extract 1/2 c all purpose flour 1/4 c sugar 1/2 t salt 2 T lemon zest Powdered sugar for dusting Heat a griddle. Whip egg whites until they hold firm glossy peaks, and set aside. Beat ricotta, butter, egg yolks, and vanilla together and set aside. Whisk together flour, sugar, salt, and zest. With a rubber spatula, stir dry ingredients gently into the ricotta mixture. Stir a spoonful of whipped egg whites into the batter then gently fold in the remainder. Grease the heated griddle, if necessary. Drop 3 tablespoons of batter for each hotcake on the griddle, allowing space for spreading. Cook until golden on the bottom and the top shows a bubble or two. Gently flip, and cook until undersides are light brown. Dust with powdered sugar. I also drizzled w/ pure maple syrup before serving. Enjoy:)

As Rachael Ray would say..."Yummo!" :) I've seen Giada make ricotta pancakes before but I like this recipe better. I like most anything lemon. DH loves maple syrup but I'm more into fruit so I would probably use blueberries made into a compote. Thanks for sharing your beautifully presented hotcakes w/recipe. :)

Guys..they are good..light and puffy and lemony..the blueberry compote sounds like a plan:) I think they're fat free..

Indeed they are! What with all that fat-free butter, and fat-free egg yolks. Hard to beat! Of course you used carb-free flour, sugar and syrup too, right? Actually, as foods go, these are not too bad nutrition wise. They have a good dose of protein from the eggs and it is not overly carbohydrate loaded. It's a good balance.
