This is another one of Paula Deen's recipes. I've made it twice in less than a month. It is soooo good! It's supposed to be one of those casseroles you can take when it's a 'bring a dish to pass' situation. This is what I've done and it was very well received. I give it four out of five stars. I would welcome other casserole recipes because we do casseroles for passing once a week during Lent. Shrimp and Wild Rice Casserole* 1 8 oz. pkg. wild rice 1 lb. medium shrimp, peeled and deveined 2 TBSP butter 1/2 green bell pepper, seeded and chopped 1/2 onion, chopped 1 can cream of mushroom soup 2 c. sharp cheddar cheese, grated Cook the rice according to pkg. directions minus 1/4 c. water. Drain and cool. Bring 2 cups water and 1/2 TBSP. salt to a boil in a medium saucepan and cook the shrimp for 1 minute. Heat the butter in saucepan and sauté the pepper and onion until soft, about 5 min. Preheat over to 325ºF. In a large bowl, combine the rice, soup, 1 1/2 c. of the cheese, shrimp, and vegetables. Add salt and pepper to taste. Mix well. Spray a 11" x 7" glass casserole dish with vegetable spray. Place the mixture in the pan and top with remaining 1/2 c. cheese. Bake for 30 min., until bubbly. *I cheated...used shrimp I bought already cooked. I used "Royal Blend" rice which includes Texmati, white, brown, wild, and red rice. It is very good. I doubled the recipe it gives on the container...followed it exactly otherwise. I substituted Olivio margarine and olive oil for the butter. With the soup being concentrated, the salt in the cheese, and the rice being cooked with salt, it just doesn't need any additional salt. Don't forget...I need recipes!

I will try this:) Everytime I see Giada..I think of u:) And PD too! I don't make a lot of casseroles.. except Shepard's Pie....And Greek Shrimp bake you might like..let me see where my recipe is:) I'll look in some of my books tonight k? How about a good lasagna too:) Great thread..casseroles. I figured as much for the salt..canned soups are so salty:)

DH and I thought that if she wasn't a cooking icon she could be in another business...one that displays her.....wares! One thing I especially like about her besides her delish recipes is that she is really good at giving some helpful hints.

Tanya..do you consider chilis and beef bourguignon etc..casseroles? I have.. Prosciutto Chicken Rolls in Tomato sauce that I have made for potlucks.. I can scan and send to u..:) I have tried scanning and posting here but it becomes illegible..:( And I have Greek rice and shrimp bake with feta crumb topping. Both are nice take alongs.. Apart from that ..the staples as mentioned above and in my previous reply..And Macaroni..Martha's:)etc.. But I would be happy to scan the 2 I just mentioned..Just email me..

Sounds very good! Don't go to a lot of trouble, really. I love your fast eater...I thought I ate fast but can't hold a candle to this one. She must be vewwy hungwy!

Tanya...this is FUNNY! Not your recipe but my DH!!! Last night while watching a program, DH asked, "Do you have 8 ozs. of wild rice?" I replied, "I don't think so. Why, are you going to cook something tomorrow?" He replied, "Yes." I then asked, "What are you going to make." He replied, "It's a surprise." I read your recipe in Garden Recipes last evening and thought. Hmmm...he's going to make Tanya's recipe. I laughed and said, "You must have read GB's Garden Recipes today. Are you making Tanya's Shrimp & Wild Rice recipe?" He smiled and replied, "Yes." LOL..So today he's off to the market for wild rice and am anxious to see him make dinner of Shrimp and Wild Rice. Thanks for the recipe, Tanya...I don't have to cook today!

Tanya I am thanking you also..I made it this am..3 individual ramekins..1 each for J and I and one for my DD as F is out of town tonight..I was happy to have it all done when she called this morning..I went to Fairview w/her and now Lulu is here..Grandad is watching baby Einstein w/ him.. All I have to do is pop them in the oven..What I liked is that the cr of myshroom was not overpowering ..sometimes I find food w/ canned soups a bit that.Not in this case:)

I know what you mean Monique. I think it's that the wild rice is soooo flavorful...the soup adds creaminess but as you said, not overpowering. :)

It was delicious. Now I have to add my little à côtés I sautéed red pepper,garlic and shallots..}Then reduced with a tad of white wine.I mixed all..and added a soupçon of Sambal Oelek(I love this stuff)..Baked at 350 and broiled at the end.. J said a keeper.!}

Magnifique! Very pretty Monique but you must enlighten me...what is 'soupçon of Sambal Oelek.' Well, I checked it out and for anyone else who might not have known..."Sambal Oelek is made of chilies with no other additives such as garlic or spices for a more simpler taste. Use this sauce to add heat to a dish without altering the other delicate flavors." I bet it was very good!

Sambal Oelek is sold in a jar.. in my asian market..If you think hot sauce is hot.. well let's just say a little of this goes a loong way.. and adds a smoothness at the same time.. You know, M., I thought that sounded familiar. I've had it before for Chinese dishes. I recognized it immediately from your pic. thanks! We have a couple of Asian mkts. in Saginaw...in fact I planned on going there this week in search of a skimmer. :)

Well, DH did a good job making your casserole! However....I did not like the taste of the green pepper and onions. I will have to modify it and either reduce the green pepper or leave it off completely and add leeks (instead of onion) and other concoctions to it. But will definitely have it again and again with a special touch from me. Thanks again, Tanya!!
