Shrimp, oyster mushroom and baby bok choy stir fry with garlic and ginger served over spaghetti squash. Great nutrition and low calorie.

Any dish w/ shrimp works foe me..except the thick alfredo type sauces..

No, I didn't marinate the shrimp, though that would be good. I just seasoned them with salt, pepper and some red pepper flakes. During the stir fry cooking, I added a splash of soy and mirin. Oh, and a bit of sesame oil. I always start with a pinch of hot red pepper in the hot oil before I add my ingredients.

How do you prepare the squash Greg? I've never been fond of it....It's probably great with all those other tasty things.

I pierce it to let the steam out and then back it in a hot (400°F) oven for about 1.5 hours. Cool it a bit, cut in half, remove the seeds and then use a fork to pull the squash strands out. We have also tried it in a pressure cooker and it worked pretty well.

It looks wonderful to me too! I just wish I could get DH to like squash! I could eat it every day but with just the two of us, I rarely fix it. :(
