We grill a LOT of salmon filets. I've finally found a recipe DH loved. Doing some research on the internet I found this recipe from Mark Bittman - the result was delicious!


Salmon-Potato Croquettes

Yield: 4 or more servings
Time: 20 minutes

1 to 2 cups leftover salmon meat
1 to 2 cups leftover mashed potatoes (just made fresh)
1/2 to 1 cup minced scallion
1/4 cup minced fresh parsley leaves
1 teaspoon peeled and minced or grated fresh garlic, or ginger, optional
1 egg
1 teaspoon Dijon mustard
Salt and freshly-ground black pepper to taste

Plain bread crumbs as needed
1/4 to 1/2 cup extra virgin olive oil
Lemon wedges

I wanted to serve a sauce for DH (A Hit):

Basically a roux with mustard:

For Mustard Sauce:
1 tbsp butter
1 tbsp cornflour
3 tbsp dijon mustard
1 cup milk
Salt as per taste

Combine the first eight ingredients; add just enough bread crumbs to stiffen the mixture, but don't make it too dry.

Shape into small cakes; dredge in bread crumbs, then dry on a rack in the refrigerator for 15 to 30 minutes. Heat a large, deep skillet over medium heat for 2 or 3 minutes. Add a film of the olive oil and cook the croquettes until they are nicely browned on both sides, about 10 minutes total. If you need to cook the croquettes in batches, add more olive oil. Serve with lemon wedges.

Crab cakes.. salmon croquettes..Bring them on! I just love this type of dish Susan..even better if someone makes them for me..
Thanks for the recipe.. And your photo is very appetizing!I don't have MB's book ..but I have heard great things..

In Québec cuisine.. salmon pies are popular..Are you familiar with them..basically the mixture above but in a pie..w/ pastry..

Jacques made Everyday Italian Salmon last night.. the recipe w/ the mustard sauce..it was good too:)

I can just about smell how tantalizing that is...I'm like Monique in that I like to have it made for me. DH's mom used to make wonderful salmon patties.
