Monique, I read through your recipe...it seems like it might be part of a dynamic duo with this one! Yours sounds just wonderful! I made this a few days ago. DH, my best friend and I just loved it. It's a Paula Deen recipe but I cut it in half and did my improvising. You guys like spicy...this fills the bill and what a treat on a wintry day. Taco Soup 1 1/2# ground beef 1 c. diced onion 1/2 small can jalapeño peppers put through small food processor 1 can pinto beans drained and rinsed 1/2 can fire roasted crushed tomatoes (Muir Glen is what I used) 1 can tomatoes with chiles (again, Muir Glen) 1 12 oz. can V-8 8 oz. frozen corn ( I used Green Giant Extra Sweet) 1/2 pkg. taco seasoning mix 1/2 pkg. ranch dressing mix 16 oz. water corn chips, shredded cheese, and sour cream for topping. Sauté the onion and jalapeño together in olive oil Add in beans, tomatoes, meat, & seasoning mixes. Add salt to taste. I also used some rind of parmesano regianno plus about 1/8 c. of the actual shredded cheese as well. Let this just come to a boil; turn down to a simmer for approx. 1 hour. Serve with shredded cheese (I had colby jack on hand and that was good but I bet jalapeño jack would've been very good as well!), Fritos, and a little dollop of cream cheese. The tangy-ness of the sour cream and crunch of the corn chips is just out of this world! P.S. P D used 1/4 c. chopped green olives and 2.3 oz. sliced black olives in hers but I did not.

Wow!This sounds like a plan T I wish I could find Muir Glen here that's all I hear about..I don't have those especially w/ chilis.. do u think it would be ok? I am making that crazy shrimp casserole again tomorrow:) Thanks Tanya..I call it crazy cause I can't get enough of it..may add mushrooms like Susan did too.. A twist!

Sure! I just happen to like MG...but there may be others that are just as good.

A friend gave me one of her cookbooks but most of hers that I've used so far have come right off the net. You just check out Foodnetwork.com and choose Paula's Country Cooking. I had toast with honey for dinner tonight...that crazy shrimp casserole sounds mighty good!
