Cheddar Cheese Braid Bread

Makes 2 loaves

3-4 1/2 cups all-purpose flour; divided

1 pkg active dry yeast ( I use 2)

1 1/2 cups milk

2 Tablespoons sugar

1 1/2 tsp. salt

1 egg

2 cups shredded Sharp Cheddar Cheese ( I use a 12 oz. pkg. or 3 cups freshly grated)

1 egg yolk, lightly beaten ( I leave out at room temperature)

1 Tablespoon cold water

1-2 tsp. Poppy Seed

Preparation:

Grease 2 baking sheets, set aside.

In large mixing bowl combine 2 cups flour and yeast. (I add the yeast and sugar to the warm milk)

Heat milk, sugar and salt until warm (115-120 deg.), stirring to dissolve sugar.

Add to flour along with egg and cheese.

With electric mixer on low, beat about 1 minute, scraping sides of bowl occasionally.

Beat 3 minutes on high.

By hand, stir in remaining 1 1/2-2 cups flour to make a stiff dough.

Turn dough onto lightly floured surface and knead until smooth; about 8 min.; adding additional flour as needed.

Shape into a ball and place in a large greased bowl, turning to grease the top.

Cover with clean kitchen towel and let raise until doubled; about 1 1/2 - 2 hours.

Divide dough into 6 pieces, Cover, and let rest for about 10 min.

Roll each piece into a 15 inch rope.

Place 3 ropes on each greased baking sheet.

Loosely braid the ropes together; pinching ends to seal.

Cover lightly with kitchen towel and let rise in a warm, draft-free place for 1 hour or so or until doubled in size.

Place oven racks so they are in upper and lower middle positions.

Preheat oven to 375 deg.

Combine the egg yolk and water and brush on each braid and sprinkle with Poppy Seeds.

Bake for 20-25 minutes, switching baking sheet positions halfway through baking time.

Let cool and slice.

(I have a large enough baking sheet to where I can put both loaves on and bake instead of using 2 baking sheets)

I make cheddar bread, almost the same recipe and it's heavenly. Toasted, it's really yummy.
