it was a cold rainy day, perfect day for tortilla soup~



i confess i am not one to follow recipes, nor give proper amounts, i just add to taste and desire. first make your favorite guacamole~



suatee~
chicken breasts
onion
garlic
add ~
chicken stock
zucchini
carrots
celery
basil
oregano
chili powder
tomato sauce 8oz
fresh fire roasted salsa 1 cup

simmer to taste
just before serving add fresh spinach and remove from heat while still bright green



place grated jack cheese in bowl, ladle soup, dollop of guacamole and place chips on top, serve immediately and enjoy~



don't forget the flan~

That looks fabulous Jain! Any leftovers?? I'll be right over..hehe. Your dishes are so bright and festive. If I had room to store them I would have WAY too many pieces.

I laughed when I saw your dessert, because I was just thinking of making flan today. For some reason this cold weather makes me want something soft and sweet. You have inspired me to actually make it instead of just thinking of it!

I love tortilla soup. We have a local restaurant that serves a great one.
Yours looks so delicious, Jain. So beautifully presented too. I love the dishes!
I must try it at home. It's been soup weather here too.

suzy soup leftovers, yes, flan NO... i finished it for breakfast! talk about sweet and smooooooooooth... who needs scrambled eggs when you can have FLAN!
thanks about the dishes, they are from costco in a box! i thought they were very fun and festive and i needed a bit color. i too am a dishaholic, my biggest fear is an earthquake as the cupboards are stacked sky high and precarious as is...
my flan recipe will most likely not tickle anyones fancy... i don't like rich foods and only drink nonfat milk so thats what i cook with. i just used 6 eggs, 2 cups of [non fat] milk, 3 T of sugar and vanilla. take 1/3 c of sugar and liquefy then pour into individual ramekins or 8/9" pie plate and roll up a bit on sides for full coverage. pour mixture into containers and set in a h20 bath at 350 for 30 minutes or until firm. because i use nonfat milk it takes 50 minutes without the extra fat. you can sprinkle with nutmeg or cinnamon for extra oomph. remove from oven let set a few minutes, then cut edges with a knife. when ready to serve, invert on plate and enjoy!

Umm..what do u mean take 1/3 cup sugar and liquefy? I know what the word means;) But how..Just melt the sugar dead on a stove?alone?
