On week ends I have the time to prepare a nice breakfast. This is one of my favorites.

Take about a cup of frozen berries and thaw in microwave. (Do not cook). Set aside.
Prepare the French toast as you normally would. I like multi-grain bread.
Drain juice from thawed berries. Mix a 1/4 teaspoon of corn starch with 2 - 3 tablespoons of sugar, break up any clumps of the starch. Add to berry juice and microwave for 1 minute. It should come to a full boil for just a few seconds. Warm the berries and cover toasts with them and the glaze. Yummy in 15 minutes.

Thanks All, I freeze both Strawberries and Blackberries and I'm always looking for quick and easy ways to use them in small doses. I came up with this method this winter and really like it. Yes whipped cream would top it off nicely, wouldn't it.

Here is my 'Blackberry and Bran' oversize pancake. My first attempt for this photo assignment, last week. It looks dark but the pancakes are made with the dark fruit.
This one is very easy. Half the "Jiffy" muffin mix, 1 medium egg, the juice from the thawed berries and enough milk to get a pancake batter consistency, fold in the berries. I saved 3 berries for photographic effect, LOL.
