Cheesecakes..

I coveted these little pans and a buddy helped me procure them..
I combined two recipes ..one for the crust From anna Olson and One foe the cake..from Party Dish..

We really liked them and I thought i would share the recipe with you..
They're almost bite sized so you can indulge:)



Here is the recipe..

Crust
1 1/3 cup all purpose flour
1 1/3 cup graham crumbs
1 1/3 cup unsweetened coconut
3 tbsp sugar
2 teaspoons lime zest
1 cup unsalted butter, melted

But I halved it..and had twice as much as I needed for the 12 mini cheesecakes..So I froze a Ziplock full for another batch next week..
I baked them at 350 F for 8 mins in the little pans..

Then I added this:)Filling
1 1/2 packages (375g) cream cheese, cut into cubes
1/3 cup (75 mL) sugar
2 x eggs
1 tsp (5 mL) vanilla
2 oz (60g) good quality white chocolate, melted
1/2 pt blackberries or raspberries(I put Strawberries..that's what I had on hand:)

Filling
Beat cream cheese until smooth; gradually beat in sugar until smooth. Add eggs, one at a time, beating well after each addition. Blend in vanilla and white chocolate.
Ladle a small amount of the cream cheese mixture in each tin and place a berry in the centre. Top with remaining mixture filling to the top.
Bake for 15-18 minutes or until puffed and set.
Let cool on a rack for 20 minutes and remove from tin. Let cool completely on a tray (centers will cave in slightly.) Refrigerate for at least an hour before serving.
Garnish with fresh berries.I also added a drizzle of caramel sauce..Jacques loved them..
It made 12...
They baked for 15mins at 375F

Oooooooo! I want one - right now! Judging from the strawberry slice they are just the perfect size for two or three bites. The caramel sauce looks like a nice touch. Thanks so much for posting the recipe. Looks like a keeper!

Just a caramel sauce..You can get these beautifully made pans at Amazon .com in the states.
Superb quality.I highly recommend them..

PW it's a pan w/ 12.. so cute maybe 2 inches max.. No springform.. the bottom pushes out..well bottoms..Amazon.Com.. Mini cheesecake pans/ Norpro:)

Jain..Of course I would make big ones for you w/ chocolate somewhere!LOTS!!!

A.. if I could have one of those medical boxes that keep things cool..you betcha:0
