I was inspired by a restaurant in Minneapolis where I had some outstanding Lemon Ricotta pancakes. If you're interested, the restaurant is downtown off of Nicolet street and is called "Hell's Kitchen". Anyway, I created this high protein rather low in carb recipe based on those pancakes.
A healthy high protein, low carb breakfast. Makes about 8 pancakes. Serving size for nutrition information is for 1 pancake. 1 cup non-fat Cottage Cheese (or ricotta) 1/2 cup rolled oats 1/2 cup flour 2 eggs juice and zest of one lemon 1/4 cup non-fat milk 1 tbsp sugar pinch of salt 1 tsp baking powder 1/2 cup dried blueberries Cheese, oats, flour, eggs, lemon and sugar were placed in a blender. About 1/4 cup milk was added until the consistency was of a thick pancake batter. The baking powder was added at the end and then the blueberries were folded into the batter. Cooked on a griddle until golden brown. Served with a splash of maple syrup and powdered sugar.

Greg I love lemon ricotta hotcakes..I bet these are great with the oatmeal..Thanks for sharing..low fat..lo cal.. Hell's Kitchen..there's a show by that name:)
