EJ a few questions for you and Karin.

How long to grill the corn? I do not have a smoker? And how did you get the cooked corn off the cob?

Can you post the recipe for the steak marinade?
And what was on the salad? I really liked it.

Also, What was sprinkled on the shrimp? It was very tasty.

We cooked the corn for a couple of hours on the smoker. Peel the husk back and check to make sure its ready to eat before taking it off the grill. Then just slice the kernels of the cob with a knife.

The shrimp cocktails were sprinkled with dill and paprika. The real secret is don't over cook the shrimp and to ice them down immediately after removing them from the boiling water.


The salad had the Avocado dressing on it.

2 ripe avocado
1 tablespoon lime juice
1/2 cup balsamic vinegar
1/2 cup IMO
1/2 cup sour cream
1 clove garlic, minced
1/2 teaspoon salt
1 tablespoon grated onion
dash cayenne pepper

Directions:

Peel, pit and mash avocado with lime juice. Stir IMO into sour cream; blend. Add remaining ingredients. Stir in avocado; chill.

serves/makes 1.5 cups

IMO is like imitation sour cream but a whole lot firmer. This is why its used. Found in most markets.
