RHUBARB COFFEE CAKE

BATTER:
1/2 C. butter
1 1/2 C. sugar
2 eggs
1 C. sour cream
1 t. vanilla
2 C. flour
1 t. baking soda
2 T. oil
2 C. chopped rhubarb


TOPPING:
1/2 C. packed brown sugar
1 T. flour
1 T. cinnamon
1 T. butter

METHOD:

1. Pre-heat oven to 350 degrees F.
2. Cream butter and sugar together.
3. Beat in eggs, one at a time.
4. Stir in sour cream and vanilla.
5. Mix flour and baking soda together and
fold into batter.
6. Add oil.
7. Stir in rhubarb.
8. Turn into greased "9 X 13" pan.
9. Topping: mix all ingredients until crumbly.
10. Sprinkle over top.
11. Bake 30 - 40 minutes until done.

I found this recipe at recipezaar. Have made it twice already!

Anyone else have a favorite rhubarb recipe to share?

Hi Suebee,
I just printed your recipe:) I just picked some nice rhubarb stalks and I have all the ingredients to make your cake! It's been along time, but I used to make the rhubarb/raspberry freezer jam!

I love anything that is made from rhubarb but unfortuntally I just can't grow it here in Texas; Too hot in the summer and not cold enough in the winter. :(
