These are so yummy!
1/2 Cup or 1 stick of butter 1 cup sugar 2 egg yolks..save the whites for the meringue 1 cup flour 1 tsp baking powder 1 cup chopped nuts(pecans or walnuts) 1 cup chopped dates 2 egg whites pinch of salt 1 cup brown sugar 1 tsp vanilla extract
Preheat oven 350F. Line bottom and sides of an 8x8 inch sqare pan with parchment paper or foil. In a large bowl cream butter and sugar.Add egg yolks.. Beat them in then the flour and the baking powder until just combined. Press the dough evenly in the pan Top with chopped dates and nuts. In a clean bowl(not plastic) whip the egg whites with salt till soft peaks form add brown sugar ..whip on high until meringue holds stiff peaks..add vanilla. Spread meringue over nuts and dates. Bake for 30 minutes(Smells great)
Let Cool.Remove them lifting the paper.. Cut gingerly. Enjoy..We did tonight.
