Tamborine Mountain Sausage Rolls You just choose the quantities to suit your own taste.
- Lean mince beef
- mashed potato
- Red spanish onions
- garlic cloves
- fresh ground pepper
- tomato paste
- chopped parsley
Sheets of puff pastry - ours are about 12in. square I cut each sheet into 4 squares Now cook the mince in a frypan with the onion and garlic. Now put all of the ingredients into a basin and mix together. Mixture should be medium firm. Put enough mixture on each little pasty square so that when you pull the sides together at the top it is full. Pinch pasty together along the top with milk. The ends are open. Paint the top with milk and sprinkle with sesame seeds and a pinch of cayenne pepper sprinkled very lightly on top. Bake in hot oven until golden brown.

LOL. Here's some translation . . . Use GROUND beef and mix everything in a BOWL!
Seriously, this sounds really nice Carolyn. I love puff pastry and this looks delicious. I would add tons of garlic to mine and maybe some chopped chilis of some kind.

Yes, I am growing Thai Dragons, Serranos, Cayenne, and a new hot one for me called Bulgarian Carrot. Growing chilis here in the north can be a challenge. I'm trying cayenne again, but I have difficulty getting them to ripen before the fall frost. Thai chilis grow well as do most of the chilis that are good green (jals, and serranos). About half of my habaneros ripened last year and I made some nice sauce out of it. Say, do you think there would be enough interest in a forum for peppers? Or maybe tomatoes and peppers as people who grow one generally grow the other. Otherwise, the edible forum would be a good place for pepper discussions.
