That's so pretty. I used to make carrot cake. I love it but oh the calories and fat!

Please post the recipe, Monique. When I lose the 5 pounds I've gained since Christmas, I'll make it! Carrot cake is one of my favorites. Yours is lovely!

Beautifully presented as always! Good idea for an Easter cake. I like cake for breakfast too! I just had leftover raspberry pie for breakfast this morning.

Here you are Susan.. Rosso and Lukins also have a good one..But you have to cook the carrots.This ones'a breeze. Carrot Cake
Mix 2 cups of flour,2tsps of baking powder,11/2tsp of baking soda,3 tsps of cinnamon,1 tsp of salt.
Add 1 cup of Mazola Oil,2 Cups of sugar,4 eggs.Mix well.
Then add 2 cups of grated carrots,i can of crushed pineapple(drained)1 cup raisins,1cup chopped pecans or walnuts. Put in 2 round 8 inch pans Bake at 375 for 10 mins then 350 for 35-40mn Cream cheese Frosting 8 ozs of cream cheese 1/2 stick of butter plus 1 tbsp 1 Box Icing Sugar 1 tsp of vanilla Maple syrup to taste. Combine all. My tip.. I freeze the cakes..Then I ice them frozen. Enjoy.
