Had a birthday luncheon for a friend last Friday and served these - they were both wonderful! All you need is some crusty bread and a little fruit on the side. SHRIMP SALAD WITH AVOCADO AND BASIL (Adapted from a Bon Appetit Recipe) Use packaged prewashed mixed baby greens to make this salad in practically no time. 1/4 cup fresh lemon juice 3 tablespoons drained capers 1 shallot, minced 1 tablespoon Dijon mustard 1/2 teaspoon dried crushed red pepper 1/2 cup olive oil 1/2 cup chopped fresh basil 1 pound frozen, precooked, jumbo shrimp, thawed 2 large avocados - diced 8 cups mixed baby greens (about 5 ounces) Freshly grated Parmesan cheese (optional) Whisk lemon juice, capers, shallot, mustard, and dried red pepper in medium bowl. Whisk in oil, then basil. Season dressing to taste with salt and pepper. Add 1/3 cup dressing to shrimp and toss to coat. Refrigerate until ready to serve. Toss greens with shrimp and diced avocado in large bowl with enough dressing to coat lightly. Serve, passing Parmesan cheese separately, if desired. OFFBEAT CHICKEN SALAD (From the Los Angeles Times Cookbook) Yogurt-Horseradish Dressing: 1/4 C plain low-fat yogurt 2 T prepared horseradish 2 T olive oil 1 small clove garlic crushed Salad: 1-1/2 C diced, cooked chicken 1 C diced celery 1 medium green bell pepper, diced 4 green onions, thinly sliced 2 to 3 springs parsley, chopped 1/4 C slivered almonds - toasted 10 Kalamata olives, pitted and diced Romaine lettuce, torn into bite-sized pieces Freshly ground black pepper Combine yogurt, horseradish, oil and garlic. Chill until ready to use. To make salad, combine chicken, celery, green pepper, green onions, parsley, almonds, lettuce and a few grinds of fresh pepper in medium bowl. Add dressing and toss gently.

Thanks..Need good summer recipes..I'll post some of my summer salads for you soon ..I think you will like them also.How about helping me plan a pretty summer wedding shower? Ideas, favors, etc..

My favorite showers have been just good food, good wine, and good conversation. Many of the recent showers I've been to have been an "Hourly Theme" where the guest is given a time of day and needs to bring a gift pertaining to that hour of the day. I would think that garden favors would be absolutely perfect for you. Perhaps lovely potted herbs in hand-painted and ribboned terra cotta pots, or little "secret treasure" boxes which you do so well. Great fun!

Yummmmm. Nothing beats a nice salad on a summer day.
