I just threw this together for lunch today and thought I would share the recipe. There are lots of adaptations you can do. 1 can tuna (you could use cooked chicken as well) 2 carrots 2 stalks celery 1/2 cup cooked course bulghar wheat (you could use rice, wild rice, or any other cooked grain) 2 TBS mayonnaise 1-2 TBS curry powder (to your taste - add a hot chili powder if you want more kick) Mix everything. This was served on top of baby romain leaves and topped with dried cranberries. You can also mix the cranberies into the salad. The romain was drizzled with a tiny amount of flavorful olive oil and balsamic vinegar.

Oh, I forgot to mention that the recipe serves 2. Also, the title should say "tuna", not chicken, but you could make it with chicken just as well.
