Chocolate Pound cake

3 1/3 cups sifted all purpose white four
1/2 cup unsweetened cocoa powder
1/4 tsp. salt
1/4 tsp. baking powder
1 cup butter
1/2 cup vegetable shortening
3 cups sugar
6 eggs
1 cup plus 2 tablsp. milk
1 tsp. vanilla
1 tsp. butter flavouring (optional)

1. Grease and flour a 10 x 4 inch tube pan. Preheat oven to 300 F.

2. Combine sifted flour, cocoa, salt and baking powder in a medium sized bowl; reserve

3. Beat butter, shortening and sugar in a large bowl with electric mixer at high speed until mixture is well blended. Add eggs one at a time. Continue beating until mixture is light and fluffy. By hand, add dry ingredients alternately with milk, vanilla and butter flavouring to the butter mixture, beating after each addition just until smooth. Do not overbeat. Pour into the prepared pan.

4. Bake in bottom third of oven at 300 F. for 1 and 1/2 hours, top should spring back lightly when touched with a fingertip.

5. Cool on wire rack.

6. Loosen around the edge of the pan, and turn out on wire rack.

Let cool completely.

Notes:

Cake is moist and delicious and does not need frosting, although you may wish to use a thin chocolate glaze. I use Brown Cow!

It is also possible to make a marble cake by leaving out the coca until the end, dividing the white batter and adding coca to one half, and then alternating spoonfuls of white and chocolate batter when putting it into the pan.

Thank you Julie, I've been thinking and thinking about this. It sounds delicious. One more day of carpenters and then I can start baking and cooking in earnest again.

Brown Cow? Chocolate frosting? I just love pound cake plain. I have a friend that used to slice it, fry it in butter and put chocolate sauce on it. Talk about calories.
