While visiting our family in Virginia, our daughter made salmon with mango salsa. The salmon was wonderful but the salsa, I could have eaten the whole bowl with a spoon. A nice summer side dish or condiment. Kimberli's Fresh Mango Salsa 2 C plum tomatoes, seeded and diced 1 1/2 C diced peeled ripe mango 1/2 C diced onion 1/2 C chopped fresh cilantro 2 T fresh lime juice 1 T cider vinegar 1 t sugar 1/2 t salt 1/2 t black pepper 2 cloves garlic, minced Combine and enjoy

Ooh, I love mango salsa. I generally add a few chopped green chilis such as serrano or jalapeno. Also, I find firm not quite fully ripe mango makes the best salsa.

Kim mentioned using *crisper* mango in the salsa, she enjoyed the texture. I like a little jalapeno too. I think I'd like to try peaches in it for a change sometime. Lulubelle, I hope you do try it, it was so delicious. Easy to make too.

YUM. That reminds me, I have a chicken mango recipe that is great for warm summer days too...I'll have to dig that one up soon.
