We went to a wonderful family dinner last night and the below recipe was served for dessert. It was absolutely heavenly! This is the recipe Aunt Pat sent to me.


No Bake Peach Blueberry Pie

Crust: l 1/4 c. flour, 1 TB sugar, 1/2 tsp. salt, 1/3 c. oil, 3-4 Tb water, 1/2 C chopped or slivered almonds. Mix flour with water. Fold in almonds. Pat into 10" pie plate. Bake at 375 degrees for 20 min. Cool.

Filling: 4 C sliced peaches (fresh or frozen)--I used fresh, 1 C blueberries (fresh or frozen)--again, I used fresh. Combine and set aside.
In small pan: 1 c. water, 1 c. sugar, 3 tab. cornstarch. Bring to boil and cook 1 min. Remove from heat and add 1/4 c. lemon jello. Stir 'til dissolved. Cool to room temp. Pour over fruit mixture and toss. Pour into pie shell. Refrigerate at least 2 hours. Top with whipped cream.

Sounds yummy! I've made something similar with fresh strawberries and strawberry jello. Always a hit!

No carolyn, jello is very different, it's flavored gelatin. Gosh, I'm sorry I didn't get back here way earlier.
