Marie reminded me that I had not posted this yet. A treat for my family at this time of year!

From Mme. Benoit

1 1/2 lb tomatoes, peeled and cut up (6-8 large)
1 tbsp. butter
2 medium onions, chopped
1 tsp. each sugar and salt
1/4 tsp. each pepper and paprika
2 cans consomme and 2 cans water

Melt butter, saute onions and tomatoes
Cook, stirring, 10 minutes
Add seasonings, cosomme and water.
Simmer uncovered 15 minutes
Blend 1 tbsp. flour and 2 tbsp. butter
Stir into soup.
Simmer uncovered for 5 minutes
Add 3 tbsp. sherry and 3 tbsp. cream before serving.

Soup freezes well, but freeze before adding cream and sherry. Add cream and sherry when reheated and ready to serve.

Well we're having it for dinner. Sure hope DH remembers to bring home the sherry! I should probably make more to freeze because there are lots of tomatoes on the ground now.

Then I have to pick the plums. Wish there were more sun and warmth so that the cantaloupes and eggplants would continue to ripen!
