This is our family's favorite - tastes great with any meat entrée - the possibilities are endless! 2 stalks broccoli, cut into flowerettes 1/2 head cauliflower, same as above, Brussels Sprouts (1/2 bag frozen-thawed, or fresh) 4 Fresh carrots, peeled and sliced thick 1 cup Butternut Squash or 2 Yams, cut into bite-sized pieces 1 bunch asparagus, cut-up Kosher Salt Freshly Ground Pepper Olive Oil (about 1/4 cup) Spread medley of veggies on a large baking sheet. Add olive oil, kosher salt and ground pepper. Roast in hot oven (450) for about 40-60 minutes. Add asparagus tips during last 15 minutes.

Oh, I love roasted veggies and this sounds terrific. I'm definitely saving this recipe!

I do exactly this but add garlic to roast with it:) I could eat just that.Yum. I sometimes add a spice blend I have conjured up.

Good Grief!!! How can you do this to me when I'm at work and no food nearby. d'ast I call you cruel? Believe me, this cold carrot and piece of celery will NOT suffice!! Pout, pout, pout!!! But, I must be grateful . . .

I do this same recipe with asparagus only. It comes out browned and yet still green with a very fresh taste. I don't roast it quite as long, maybe twenty minutes. You'll know when it's ready when the stalks are browned. It's wonderful. I never cook asparagus any other way now. And it's great for fresh green beans too.

I do this with all veggies from the crisper and add loads of garlic the way Monique does. That's a meal for me, I'm not much of a meat eater.
